The wine: Still one of the trendiest white wines in Italy, Gavi di Gavi Fossili has a deep golden colour with a luscious full body. Quite minerally and with rich nutty and lemon flavours with floral overtones. Super length.

The story: The Cantine San Silverstro lies in Piemonte (foot of the mountains) in the shadow of the Alps in the extreme north-west of Italy. This is the region where the great age-worthy Barolo and Barbaresco wines are made from the Nebbiolo grape. San Silvestro make these wines, too. They are great wines for great occasion. They also make wines from the white Cortese grape, the best of them being this Gavi di Gavi. It is made in Stainless steel tanks too keep all possible freshness.
